Мне показалась, что это была моя самая удачная индейка. Возни не много, а мясо получилось сочным и испеклась она буквально за 1 1/2 - 2 часа. Однозначно достойный рецепт для повторения!

Serves about 10

Apple Brine

1 gallon apple juice
1 1/2 cups kosher salt
1 cup brown sugar
1 large sprig fresh rosemary
4-5 large sprigs fresh thyme
about 1/2 gallons' worth of ice cubes
1 gallon ice water
1 13-pound turkey

Garlic Herb Butter

1/2 cup butter, softened
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped
2 teaspoons fresh rosemary, chopped
1 teaspoon fresh thyme, chopped
Salt and pepper

To make brine: Combine 6-7 cups apple juice with salt, sugar, and herbs in a large pot. Bring to a boil and simmer about 5 minutes, or until salt and sugar are dissolved and herbs are fragrant. Remove from heat and add ice cubes; pour into a large, clean, nonreactive container (I used a new, clean trash can) and add remaining apple juice and water.
Place turkey in brine, breast-side down, and fill cavity with brine. Add additional water if turkey isn't fully submerged. Allow to brine for at least 8 hours (overnight is best).
While turkey is brining, combine all ingredients for Garlic Herb Butter in a bowl; set aside at room temperature until ready to use.
After brining, remove turkey from brine and discard excess brine. Rinse turkey, including the cavity, and pat dry with paper towels. Let stand, uncovered, for about 4 hours to allow skin to dry.
When ready roast, preheat oven to 350 degrees. Separate skin from turkey breast and legs, and stuff butter under skin. Rub remaining butter on the outside of the turkey. Roast for approximately 2 1/2 hours, or until thigh temperature reaches 160 degrees. Let stand 30 minutes before carving.

1 cup water
1 cup sugar
12-oz bag fresh or frozen cranberries (3 cups)
1/2 teaspoon freshly grated orange zest

Preparation

Bring water and sugar to a boil, stirring until sugar is dissolved. Add cranberries and simmer, stirring occasionally, until berries just pop, 10 to 12 minutes. Stir in zest, then cool.

Cooks' note: · Cranberry sauce may be made 3 days ahead and chilled, covered.

На мой взгляд не диетическое, но очень пряное, с яркой выраженной итальянской ноткой блюдо.



1/4 cup / 60 ml freshly squeezed orange juice
1 14-ounce can crushed tomatoes

1 head of broccoli, florets and stalks trimmed and cut into bite-sized pieces

1/4 teaspoon chopped fresh oregano
1/4 teaspoon red pepper flakes
1/4 teaspoon fine grain sea salt
1/8 teaspoon freshly ground black pepper
1 tablespoon extra virgin olive oil
1/4 cup Parmesan cheese shavings
2 tablespoons toasted sliced almonds

In a medium saucepan over medium-high heat combine the orange juice and tomatoes. Bring to a boil and stir in the broccoli. Stir in the oregano and red pepper flakes, then cook until the broccoli it just tender,and bright green - a couple minutes. Do your best to avoid overcooking the broccoli. Season with salt and pepper, and transfer to a serving dish. Drizzle with the olive oil, and sprinkle with the cheese and almonds before serving.

Serves 4-6 as a side.

Ингредиенты:
помидоры; красный лук; гранат; соль, молотый перец - по вкусу; растительное масло - 2 ст.л.


Помидоры нарезать восьмушками. Луковицу разрезать на половинки, затем порезать очень тонкими полукольцами. Лук сложить в дуршлаг и ошпарить. дать воде полностью стечь.

Сложить в салатник помидоры и лук, приправить перцем и солью. Гранат разломить и добавить к помидорам зерна.


Влить в салатник растительное масло, перемешать. Салат можно сразу подавать столу.
