Я очень часто, точнее всегда, когда есть хорошие помидоры, а они у нас не круглый год, делаю эти тапас, так что странно, что здесь не было рецепта. Пусть теперь будет.


2 large, ripe beefsteak tomatoes
Kosher salt
1 loaf ciabatta, split in half horizontally lengthwise, cut crosswise into 1 1/2-inch slices
Extra-virgin olive oil
2 medium cloves garlic, split in half
Flaky sea salt, such as Maldon or fleur de sel

Split tomatoes in half horizontally. Place a box grater into a large bowl. Rub the cut faces of the tomatoes over the large holes of the box grater, using the flattened palm of your hand to move the tomatoes back and forth. The flesh should be grated off, while the skin remains intact in your hand. Discard the skin and season the tomato pulp with kosher salt to taste.

Adjust rack to 4 inches below broiler and preheat broiler to high. Place bread, cut side up, on a cutting board and drizzle with olive oil. Season with kosher salt. Place bread, cut side up, on a rack set in a tray or directly on the broiler rack and broil until crisp and starting to char around the edges, 2 to 3 minutes.
3.

Remove bread from oven and rub with the split garlic cloves. Spoon tomato mixture over bread. Drizzle with more extra-virgin olive oil and season with flaky sea salt. Serve immediately.

Сегодня сделала и очень довольна! Буду повторять и для мужа, и для гостей. Быстро, просто, дешево, изысканно и вкусно.

таким образом (можно приготовить не только тунца, а) любую другую рыбу с плотной мякотью, будет также вкусно, только обжаривать ее нужно немного дольше. Кусочки филе тунца обжарить на оливковом масле с двух сторон по 30 секунд, выложить на тарелку и сразу залить соусом татаки. Для соуса смешать в миске измельченный свежий имбирь, соевый соус, кунжутное масло, лимонный сок, сверху посыпать обжаренным белым кунжутом, мелко нарезанным зеленым луком и кусочками свежего острого перчика. На гарнир использовать дольки лимона.

тунец -несколько кусочков филе;
для соуса татаки:
тертый имбирь - 1 ст.л.;
кунжутное масло - 2 ч.л.;
соевый соус - 1 ч.л.;
лимонный сок - 1-2 ч.л.;
зеленый лук - несколько перьев;
острый перец - по вкусу.

Очень вкусные грибы! Можно сделать заранее.

3 pounds white mushrooms, trimmed
1 tablespoon extra-virgin olive oil
¾ cup cream sherry, (see Tip)
8 cloves garlic, minced

2 tablespoons lemon juice
½ teaspoon kosher salt
Freshly ground pepper, to taste
2 tablespoons minced fresh parsley

Clean mushrooms and cut in half (or quarters if large). Heat oil in a large skillet or Dutch oven over medium-high heat. Add mushrooms and cook, stirring, for 10 minutes. Stir in sherry and garlic and continue cooking, stirring occasionally, until most of the juices have evaporated, 10 to 14 minutes. Stir in lemon juice and season with salt and pepper. Stir in parsley just before serving.

Make Ahead Tip: Cover and refrigerate for up to 1 day. Bring to room temperature before serving.

Вчера сделала на ужин. Очень понравилось! И пюре из нута само по себе тоже очень вкусное и все вместе очень свежо и необычно. Можно смело повторять для гостей.

Итак замочила на ночь сухой нут. Потом переложила его в глиняную кастрюлю, залила водой, довела до кипения, и варила до готовности ( у меня ушло часа три) на маленьком огне. Посолила под конец. Когда нут уже размягчился, измельчила чеснок, морковь, сельдерей.

Обжарила овощи до золотистости, положила веточку розмарина ( уж очень он с нутом хорош) и добавила отваренный нут вместе с бульоном. Поварила минут 10, дала проникнуть ароматам.

Извлекла розмарин. Выключила и превратила в крем блендером.

Порезала кальмара на кусочки.

Обжарила чеснок с пеперончино на оливковом масле, добавила кальмара и ложку томатной пассаты ( для цвета и приятной кислинки), посолила и припустила вместе буквально 2 минуты. (я еще добавила чайную ложку тайской креветочной пасты)

Соорудила "закусочную баночку". Сначала нутовый крем, сверху кусочки кальмара. И подала!

juice of 1/2 lemon
2 tablespoons parmesan cheese, grated

Preparation

Preheat oven to 400° F.
Place the brussel spouts, olive oil and salt on a sheet tray and toss to combine.
Bake the brussel sprouts, cut side down, for 20 minutes.
Remove from oven and top brussel sprouts with sliced almonds. Bake for an additional 5 minutes.
Place the roasted brussel sprouts and almonds in a bowl, top with Parmesan cheese and the juice of half a lemon.

Офигительно вкусно! Просто супер! Делала с маленькими перчиками. Запекала 20 минут, а после на грилле еще минуту 3-5.
Ingredients

4 bell peppers (a mix of yellow, red, and orange)
1 clove thinly sliced garlic
8 thyme sprigs
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground black pepper
1/4 cup grated Parmesan
Juice of 1/2 lemon

Preparation

Stem, core, and quarter bell peppers; place on a baking sheet. Toss with sliced garlic, thyme, and extra-virgin olive oil; season with kosher salt and freshly ground black pepper. Arrange skin side down in a single layer and roast in a 425°F oven until softened, then top with Parmesan and broil until cheese is melted and peppers are slightly charred. Squeeze the lemon juice over peppers.

Per serving: 88 Calories, 6 grams fat, 3 grams fiber

1 cup panko (japanese breadcrumbs)
1 large egg, beaten to blend
1 cup coarsely crumbled feta cheese
Canola oil (for frying)
Plain whole-milk or reduced-fat Greek-style yogurt (for garnish)
Additional chopped fresh dill (for garnish)
Ingredient info: Panko is available in the Asian foods section of most supermarkets and at Asian markets. Greek-style yogurt is a thick yogurt that's sold at some supermarkets and at specialty foods stores.

Preparation

Grate zucchini on large holes of box grater onto clean kitchen towel. Sprinkle zucchini with 1 teaspoon coarse salt; let stand at least 30 minutes and up to 1 hour.
Line rimmed baking sheet with parchment or foil. Wrap zucchini in towel; squeeze out as much liquid as possible. Place zucchini in medium bowl. Mix in green onions, 3 tablespoons chopped dill, mint, garlic, lemon peel, and 1/2 teaspoon black pepper. Gently stir in panko and egg, then feta. INGREDIENTS

1 zucchini, chopped
1/2 cup chopped onion
1/2 cup chopped red bell pepper
1/2 cup baby carrots, chopped
1 large egg
1 garlic clove
1 tablespoon worcestershire sauce
1 teaspoon italian herbs
1/2 cup bread crumbs
1/2 cup shredded cheddar cheese
1 pound lean ground turkey
PREPARATION

Spray a nonstick mini muffin tin with vegetable oil cooking spray or grease with oil.
Place the zucchini, onions, bell peppers, carrots, and garlic clove into the food processor and pulse until everything is in tiny pieces.
Add the egg, worchestershire sauce, herbs, bread crumbs, cheese, and turkey. Pulse until everything is combined.
Place about a tablespoon of the meatloaf mixture in the muffin pans and pack down with a spoon.
Bake until the mini turkey loaves are cooked through or an instant-read thermometer inserted in the center registers 165 degrees F, about 20 minutes.
This recipe can also be baked in a 9 x 5 inch loaf pan and baked for 50 minutes. To Freeze: After baking, let bites come to room temperature, place in a ziploc bag, label and freeze up to 3 months. When ready, defrost over night in the fridge and place in a 300 degree oven for 5 minutes to reheat.

This is really nice, new and fresh taste! I loved it! It can be served on the individual plates as well as an appetizer in a spoon, for the crowd, or as an appetizer or even a meal (especially if one is on a diet) for a single woman. Most woman don't like to cook for themselves and this is a perfect meal, especially with the glass of aromatic white or rose.


100 g ribbons smoked salmon
strawberries, washed, hulled and sliced
to serve fresh mint leaves
lime or lemon juice, to taste
1/3 cup avocado oil
1/2 tsp black pepper to taste


Arrange 8 ribbons of smoked salmon on individual plates or a large platter.
Slice fresh strawberries in half and scatter them over the salmon, along with fresh mint leaves.
Squeeze over the lime or lemon juice, to taste.
Drizzle with a little avocado oil and finish with a good crack of black pepper.

5 oz Cabrales (Asturian) blue cheese
2 tablespoons chopped onions
¼ cup white wine, cider, cava (sparkling wine) or dry Sherry
Pinch of cumin seed
Smoked pimentón (paprika) as garnish

Place the cheese in a blender or mini processor with onions, wine and cumin seed. Blend until smooth. Serve immediately or keep, covered and refrigerated, up to 3 days. Serve garnished with a pinch of pimentón.

3 pounds chicken wingettes or chicken wings (see note up top)
1 large garlic clove, minced
1 teaspoon coarse or kosher salt, plus more to taste
2 tablespoons soy sauce
2 tablespoons hoisin sauce
2 tablespoons mild honey (I often halved this)
1 teaspoon Asian sesame oil
Pinch of cayenne or dash of Sriracha
1 1/2 tablespoons sesame seeds, lightly toasted
1 scallion, finely chopped

Heat oven to 425°F. Line a large shallow baking pan with foil and lightly oil it.

Stir wings together with garlic, salt, soy, hoisin, honey, sesame oil and cayenne or Sriracha until coated. Spread wings and any sauce that fell to the bottom of the bowl out on the prepared baking pan in one layer. Roast, turning over once, until cooked through, about 35 minutes. Transfer wingettes to a large serving bowl* and toss with sesame seeds and scallion.

INGREDIENTS

2 cups dried chickpeas

2 teaspoons baking soda

1 cup tahini

1/4 cup plus 2 tablespoons fresh lemon juice

3 large garlic cloves, minced

1 teaspoon ground cumin

Kosher salt

Extra-virgin olive oil, sumac, pomegranate seeds, roasted chickpeas, thinly sliced radishes and fresh mint, for garnish

Pita chips, radishes, 
baby fennel and carrots, for serving


HOW TO MAKE THIS RECIPE

In a medium bowl, cover the dried chickpeas with 2 inches of water and stir in 1 teaspoon of the baking soda. Refrigerate the chickpeas overnight. 
Drain the chickpeas, then rinse them under cold water.


In a medium saucepan, cover the chickpeas with 
2 inches of fresh water. Add the remaining 1 teaspoon of 
baking soda and bring to a boil. Simmer over moderate heat 
for about 1 hour, until the chickpeas are very tender. Drain, reserving 3/4 cup of the cooking water. Rinse under cold water. 


In a food processor, combine the chickpeas with 1/2 cup 
of the reserved cooking water. Add the tahini, lemon juice, 
garlic and ground cumin; season with salt and puree until creamy (add more cooking water if necessary). Transfer to a serving bowl. Garnish with olive oil, sumac, pomegranate seeds, roasted chickpeas, thinly sliced radishes and mint. Serve with pita chips, whole radishes, fennel and carrots.

Это очень и очень вкусно, не смотря на то, что я рецепт упростила, масло и пармазан в конце не добавляла. Отдельно семечки не обжаривала, а добавила в конце, минут за 5-6 до того, как достать тыкву. Просто полила соком лимона, добавила финики и сервировала с котлетами из индейки.

1/3 cup shelled raw pumpkin seeds (pepitas)
1 teaspoon plus 3/4 cup extra-virgin olive oil, divided
Kosher salt
4 pounds kabocha or acorn squash, each squash halved through root end, seeded
1 tablespoon fresh thyme leaves
Freshly ground black pepper
1/4 cup (or more) fresh lemon juice
1/4 cup chopped flat-leaf parsley
1 bunch dandelion greens, tough ends trimmed (about 4 ounces)
1 cup Deglet Noor dates (about 3 1/2 ounce), pitted, thinly sliced lengthwise
2 ounces Parmesan, cut into 1/4-inch cubes (about 1/3 cup; optional)

Preparation

Arrange racks in upper and lower thirds of oven; preheat to 375°. Spread out pumpkin seeds in a single layer on a rimmed baking sheet and toast on top rack, stirring once or twice, until lightly browned, puffed, and aromatic, about 7 minutes. Toss pumpkin seeds on sheet with 1 teaspoon oil and a pinch of salt. Let cool on sheet; transfer to a work surface and coarsely chop. DO AHEAD Pumpkin seeds can be prepared 1 day ahead. Store airtight at room temperature.

Increase oven temperature to 425°. Place squash, cut side down, on a cutting board. Using a sharp knife, carefully remove peel. Cut squash lengthwise into 3/4-inch-thick wedges. INGREDIENTS:
Mentaiko Eggs
400 grams hard boiled egg yolks
300 grams Japanese Kewpie mayonnaise
200 grams mentaiko
Dijon mustard
sesame oil
48 boiled egg white halves
Blood Orange Gelatin
1 envelope powdered gelatin
2 cups blood orange juice
To Assemble and Serve
Thinly sliced chives
Shichimi togarashi

METHOD:

For the Deviled Eggs:
In a bowl, thoroughly combine the egg yolks and mayonnaise. Fold in mentaiko. Add equal parts Dijon mustard and sesame oil. Mix to combine, spoon mixture into a piping bag, and pipe into egg white halves.

For the Blood Orange Gelatin:
In a saucepan, bloom gelatin with ½ cup blood orange juice for 5 minutes. Heat the gelatin mixture until simmering and gently stir in the remaining blood orange juice. Pour mixture onto a plastic-lined sheet tray and set in refrigerator. Using a ½-inch ring mold, cut gelatin into discs.

To Assemble and Serve:
Top each Mentaiko Egg with one Blood Orange Gelatin disc. Garnish with chives and togarashi.

2 pounds broccoli rabe (about 2 bunches) trimmed and sliced into 2-inch pieces
3 tablespoons olive oil
4 garlic cloves, thinly sliced crosswise
1/2 to 3/4 teaspoon red pepper flakes
4 oil-packed anchovy fillets
1 teaspoon kosher salt, plus more for blanching
1/4 teaspoon freshly ground black pepper
2 tablespoons lemon juice
1 ounce parmesan, shaved in strips using a peeler (1/2 cup curls)
1/4 cup toasted pine nuts

Preparation

Fill a large pot with salted water and bring to boil over high heat. Fill a large bowl with ice water.
Add the rabe to the boiling water and cook until bright green, about 2 minutes. Drain and submerge in bowl of ice water until cool, about 2 minutes. Drain and set aside.
In a large skillet over medium heat, add the olive oil. Add the garlic, red pepper flakes, and anchovies, stirring and breaking up the anchovies with a wooden spoon. Cook until garlic is fragrant and light golden in color, 1 minute.
Add the rabe to the pan with any residual water. Cook, tossing occasionally, until the mixture starts to wilt, about 2 minutes. Add the salt and pepper and cook until rabe is crisp tender, about 3 minutes more.
Remove from heat and stir in lemon juice. Taste and adjust seasoning. Spoon onto plates or a platter and top with parmesan and pine nuts.

As it was expected the dish is very nice!

Serves 2 as a side

1 pound fresh broccoli
3 tablespoons olive oil, divided
1/2 teaspoon coarse or kosher salt
A few pinches of pepper flakes, to taste
Finely grated zest of half a lemon, or more to taste
1 large or 2 small garlic cloves, minced
Juice of half a lemon, or more to taste, to finish

Heat oven to 425°F (220°C).

Prep your broccoli: Wash broccoli well — seriously, there is always a stem-colored worm hidden in the florets when I buy organic or from a farmer’s market, hooray for fewer pesticides! — and pat dry. Slice straight through the broccoli stem(s) as close to the crown of florets as possible. The crown should naturally break into several large florets, and you can cut these down into more manageable chunks. I find that less mess is made and less broccoli rubble is lost when I cut not down through the florets tops to halve chunks but up through the attached stems. (See 2nd photo above.) After cutting through the stem, I use my hands to break the floret the rest of the way in two. Don’t let the stems go to waste. I peel off the tough outer skin and knots and cut the stems into 1/2-inch segments; they cook up wonderfully this way, and at the same speed as the florets.

Drizzle the first tablespoon of oil over your baking sheet or roasting pan and brush or roll it around so it’s evenly coated. In a large bowl, toss prepared florets and stems with remaining olive oil, garlic, pepper flakes, salt and lemon zest until they’re evenly coated. Spread broccoli in an even layer in prepared pan.

Roast for 20 minutes, then use a spatula to flip and move pieces around for even cooking. Roast another 10 to 15 minutes, checking every 5, until broccoli is toasty and as crisp as you like it. (As you can see, we like a serious char on ours.)

From the oven, taste a floret for seasoning and add more salt and pepper flakes if needed. Shower with fresh lemon juice and eat immediately, as-is or follow one of the adventures below.

На самом деле очень вкусно, особенно если несколько дней постоит в холодильнике. Я одна все съела.

Баклажан — 2 шт
Лук репчатый — 1 шт
Чеснок — 2 зуб.
Перец болгарский — 2 шт
Помидор — 1 шт
Томатная паста(паприка-крем (острая)) — 1 ст. л.
Сахар-песок — 1 ст. л.
Соль (по вкусу)
Перец черный молотый (по вкусу)
Масло оливковое — 4 ст. л.
Зелень петрушки
Кунжутные семечки ((кедровые орехи)



Баклажаны нарезать кружочками толщиной 0,5 см. Посолить, сложить в миску и отставить, чтобы пустили сок, на полчаса.

Лук нарезать полукольцами, чеснок натереть на мелкой терке.

Болгарский перец- небольшими кубиками.

Помидор нарезать мелко, предварительно очистив от кожицы.

На сковороду, разогретую с оливковым маслом выложить лук и чеснок, немного обжарить и добавить болгарский перец.Жарить минут 5-7.

Добавить помидор,крем-паприку ( или томатную пасту), сахар, соль и перец по вкусу.
Хорошо перемешать и продолжать жарить еще минут 5-7.

Баклажаны промокнуть салфеткой,чтобы избавиться от лишней влаги.

Выложить на противень, сбрызнуть оливковым маслом и сверху положить по ложке овощной смеси.

Выпекать в духовке примерно минут 30-35 при температуре 180 градусов.
Подавать с кунжутом (кедровыми орешками)и петрушкой.

Ingredients

2 heads cauliflower
2 tablespoons olive oil
1 teaspoon kosher salt
½ teaspoon pepper
1 cup grated parmesan
2 lemons
¼ cup parsley, finely chopped
3 cloves garlic, minced
½ cup walnuts, roughly chopped

Instructions

Preheat oven to 425 degrees.
Cut each cauliflower head lengthwise into thirds, preserving the middle section and setting aside the outer two thirds. Cut each middle section into three 1 - 1½" steaks and arrange on a parchment lined baking sheet. Brush the olive oil over the tops of each steak, sprinkle with salt and pepper, then bake for 30 minutes, flipping once. Sprinkle the parmesan over the steaks and return to oven for another 10 minutes.
Meanwhile, make the gremolata. Zest the skin of one lemon, combine with parsley and garlic, set aside.
Heat a small skillet over medium heat, add the walnuts, stirring often until toasted. Remove walnuts to small bowl, set aside.
Halve the remaining lemon and place cut side down in the same skillet, occasionally applying pressure so that a small amount of juice releases. Cook until flesh is charred.
To serve, squeeze charred lemon juice over the steaks, then top with gremolata and toasted walnuts.

Freshly ground black pepper, to taste
1 tablespoon drained tiny capers
Toasted olive or rosemary bread, for serving

Preparation

1. Spread the salmon slices out on a dinner plate or an oval plate (7x12 inches).
2. Cover the salmon with the tomato slices. Drizzle with the olive oil.

Ну вот я его и нашла! Здравствуй, мой идеальные рецепт баклажанов. Я его искала среди капонат, ошибочка вышла, оказывается, это рецепт ливанской кухни. АХ!

Ингредиенты (на 8 порций):

1 кг баклажанов, нарезать ломтиками 1 см толщиной
125 мл (1/2 чашки) оливкового масла
95 г (1/3 чашки) томатной пасты
1/2 ч.л. нити шафрана
250 мл (1 стакан) кислый сок (я использовала гранатовый сок)
1 красная луковица, мелко порезанная
1 зубчик чеснока, измельчить
1 чайная ложка молотого кумина
1/4 ч.л. паприки
450 г помидоров, нарезать крупными кусками (также можно взять помидоры черри)
40 г (1/4 чашки) кедровых орешков, обжаренных (или любых других по вкусу измельчить)
1 ч.л. соли
зелень для украшения

Приготовление:

Поместить баклажаны в большую миску и приправить солью и перцем. Добавить 4 ст.л. масла и хорошо перемешать. Добавить томатную пасту, затем, втереть ее в баклажаны.

Нагреть оливковое масло в сковороде и обжарить баклажаны до золотистого цвета. Выложить их в глубокое блюдо.

Налить сок в маленькую миску, добавить нити шафрана и отложить в сторону.

Разогреть оставшиеся 2 столовые ложки масла в большой сковороде на среднем огне. Добавить лук, чеснок и 1 ч.л. соли, и готовить, помешивая, в течение 5 минут или пока лук не станет мягким.

Добавить кумин и паприку, перемешать, готовить в течение 1 минуты или до появления аромата.

Добавить помидоры и перемешать. Накрыть крышкой и готовить в течение 8-10 минут или пока все помидоры не станут мягкими. Добавить сок и довести смесь до кипения. Выключить.

Выложить помидоры к баклажанам.

Украсить орехами и зеленью.
